Truffles are edible spores that develop on a subterranean fungus belonging to the Tuberaceae family. Truffles and mushrooms are frequently mistaken for one another, although they are not the same species since truffles grow underground while mushrooms grow above ground.

More than 200 truffle kinds exist, each with a unique flavor, cost, and application. Black truffles and white truffles are the two main types of truffles.

Black Truffles

Since black truffles are typically less expensive than their white cousins, the typical home cook can more easily afford them. As a result, they are frequently used in sauces, compound butter, risotto, and other dishes despite having a less fragrant flavor and higher heat tolerance.

The Périgord area of France is home to some of the most well-known black truffle varietals.

White Truffles

The native to northern Italy, white truffles are indeed a delicacy. They taste stronger and more fragrant. White truffles are often eaten in small quantities because they are so uncommon and have such a strong flavor. They are frequently used as a garnish or shaved over refined foods (such pasta and risotto).

Where to Buy Truffles

Truffle purchases are complex. It’s easiest to go truffle hunting on your own or to get them directly from a forager because they are so uncommon and perishable.

Depending on where you reside and the season, you can find them at Italian specialty shops and gourmet stores.

Truffles can also be purchased online by the ounce. However, this can get rather pricey as you’ll need to pay overnight shipping on top of the already high purchasing price due to their fragile nature.

How to Store Truffles

Use truffles as soon as possible because they are highly perishable. As soon as they are harvested, they begin to lose quality. Fresh truffles can be kept for a few days in the following situations:

  1. Place the truffle in an airtight container.
  2. Add dry rice to the container to absorb moisture and prevent sogginess.
  3. Store in the fridge for up to five days. Of course, the sooner you eat the truffle the better it will taste.

Like other delicate ingredients, truffles can be challenging to use. Here are some pointers for using fresh truffles in your kitchen:

  • Make truffles the star of the show. Add them to mild recipes that let them shine, such as cream sauces and potato-based dishes.
  • Use a mandoline to get the thinnest slices possible. It may seem excessive, but it’ll help you get the most out of your truffle.
  • Opt for low or no heat. Cooking fresh truffles too much or too quickly will affect their flavor and aroma, so be as gentle as possible.

What to Do With Truffles?

Due to their rich flavor, limited shelf life, and exclusivity, gourmet products like truffles might be a little scary. So if you’re fortunate enough to come across a truffle, consider one of these suggestions:
